Roasted to a medium level, Mid City introduces a distinctive note from Ethiopia’s Shakisso Estate, where beans are grown wild and foraged under a natural tree canopy. This unique blend of heirloom varietals, part Typica and part Geisha, produces a tropical fruit bomb in the cup, adding an exotic layer to your coffee journey.

Mid City is your perfect allrounder for a balanced and flavorful coffee experience. Whether enjoyed straight with milk or as a cold brew, its versatility and exotic Ethiopian twist make it a standout choice for coffee enthusiasts.

Brewing Instructions

Espresso:

  1. Coffee Dose: Start with 17-20 grams of Mid City.
  2. Grind Size: Adjust your grinder to a fine setting. If you desire more intense, bitter notes, grind finer. For a smoother profile, opt for a slightly coarser grind.
  3. Portafilter Prep: Distribute the coffee evenly in the portafilter basket, ensuring a level surface.
  4. Tamping: Apply firm and even pressure while tamping the coffee grounds. Aim for a level and compact puck.
  5. Brew Time: Initiate the extraction process, aiming for a total brew time of 28-32 seconds.
  6. Brew Ratio: The ideal brew ratio is 1:2, meaning you should aim for 40 grams of espresso output from the 20 grams of coffee dose.
  7. Adjustments: If your shot is extracting too quickly, consider using a finer grind to slow down the flow and intensify flavors. Conversely, if it’s too slow, go for a slightly coarser grind for a smoother extraction.
  8. Taste: EXPERIMENT with grind settings to find the balance that suits your taste preferences, dialing in the bitterness to your liking.

 

AeroPress

  1. Coffee Dose: Begin with 15 grams of finely ground Mid City.
  2. Water Temperature: Heat 200 grams of water to around (93°C).
  3. Assembly: Set up the AeroPress in the inverted position. Attach the filter cap securely.
  4. Coffee Loading: Add the coffee grounds to the AeroPress chamber.
  5. Pre-Wet Filter: Moisten the filter with hot water, ensuring a good seal. Discard the rinse water.
  6. Water Pour: Pour the hot water over the coffee grounds, making sure to saturate them evenly. Stir gently to ensure uniform wetting.
  7. Brewing Time: Attach the plunger and let the coffee steep for about 1 minute and 30 seconds.
  8. Plunge: After the steeping time, slowly and steadily press the plunger down. Aim to complete the press within 30 seconds.
  9. Serve: Dilute the concentrated espresso with hot water if desired or enjoy it as is.
  10. Adjustments: Experiment with the coffee dose, water temperature, and steeping time to fine-tune the flavor to your liking.
